What NOP certification ensures

To sell organic EVOO in the United States, oils must be stored in a NOP-certified facility. NOP stands for the National Organic Program, a federal regulatory system overseen by the USDA.

NOP develops and enforces standards for organically produced agricultural products sold in the US and accredits third-party certifiers who verify that businesses meet national organic requirements. USDA and these certifiers work together to uphold strict standards.

Many oils are certified at origin, but their quality is compromised later. Improper storage erases most of the health benefits of careful harvesting and testing, leading to substandard olive oils.
